According to Top Chef: salt. Also (from Top Chef) I learned it is possible to be over-seasoned, which is more detrimental than being under-seasoned. Presumably because adding more seasoning is more easily done than undoing unwanted seasoning…
I prefer my professionals with fava beans and chianti.
